I have this problem where I make awful salads. I love ordering salads at restaurants, but when I make my own they suck.
Then I figured out my problem: I make them too healthy. I try to add too many veggies to make the salad this great colorful vitamin-packed beacon of nutrition that actually doesn’t taste good. I add peppers and mushrooms and celery and tomato and cucumber and then I just don’t even enjoy it because there isn’t any FUN in it. Ironic, huh? I don’t like my salads because they’re too healthy.
But this salad rocks! It seems the trick is less veggies, more cheese. Cheese is FUN.
I’ve made this salad for lunch and been having it with some crackers or sweet potatoes or toast for carbs. It’s got a perfect mix of salty, sweet, crunchy, and creamy. It’s got protein and fat and veggies and a few carbs. And it has goat cheese. GOAT CHEESE. Every salad should have goat cheese.
Chicken, Apple & Goat Cheese Spinach Salad
These amounts are estimates – I usually just throw on an amount that looks good. Feel free to do the same.
- 2 cups spinach
- 1/4 cup diced red onion
- 1/4 cup diced green apple
- 1/4 cup crumbled goat cheese
- chicken breast, cooked and cut into small pieces. Here is my chicken recipe.
- 2 TBSP balsamic or lite balsamic vinaigrette
