This isn’t much of a recipe. There are only five ingredients and there is no cooking involved. BUT it is one of my favorite breakfasts lately so I’ll give you a how-to:
Cinnamon Sugar Yogurt with Soft Cinnamon ApplesServes: 1 Time: 5min
- 1 container or 1 serving plain Greek yogurt
- Sweetener of choice (stevia, honey, etc)
- ~ 2 teaspoons cinnamon, separated
- 1 TBSP chia seeds
- 1 apple
First, dice your apple and place in a microwave safe bowl. Sprinkle liberally with cinnamon (~1 tsp).
Mix the apples and cinnamon with your hands, then microwave for 1 minute so the apples get soft. It will smell like apple pie!
While the apples are in the microwave, start to mix your yogurt. Add the sweetener, cinnamon, and chia seeds to your yogurt and mix thoroughly.
Scoop the yogurt into a bowl, then top with the apples.
I make mine the night before and leave it in the fridge so that the yogurt gets really thick. You could eat it right away too, or always add some water or milk if you like your yogurt a little bit thinner. And definitely try it topped with some peanut or almond butter!
It reminds me of vanilla ice cream with apple pie. But for breakfast🙂
