I skipped last week while I was in San Diego, but it’s back! Here’s a recap of the past week in sets of five.
Five Things I Ate:
Fancy four course meal on NYE. P planned a surprise date for me and the meal was delicious! My favorites were the sweet potato soup, the carrot cake, and of course the champagne!
Amazing salad from the Phoenix Airport on Tuesday. I wish we had this restaurant! Kale + quinoa + bell pepper + grapes + manchego cheese + sunflower seeds + lemon vinaigrette
Love Grown Hot Oats! I’ve had one for breakfast each morning and they are AWESOME. Perfect to take to work. Giveaway in mid January!!
Chicken and veggie stir fry with whole wheat couscous Wednesday night. I made dinner for my parents and I think they liked it! Can’t wait to try more recipes for them. It’s way easier to cook when it’s not just for one!
Use the fridge dinner on Thursday: spinach salad with peas, red onion, bleu cheese, garlic cold nuggets, and two over easy eggs. I admit I went to the store to buy spinach, but the rest was from the fridge. I just needed greens!
Five Workouts
Mon: Kettlebell Workout with P
Tues: Hour walk with P’s Mom at 5:30am!
Wed: 6.5 mile run + abs
Thurs: 50 minute spin class + core class
Fri: Run + weights is planned before the airport

Either stop complaining about living in your hometown or move out – I LOVE LOVE St. Louis but am also really glad I got away and explored other cities. I used to hate it when people complained about living here, though!
Five Things Making Me Happy
I got a third interview for school! I’m hoping to combine that trip with the one I already have scheduled later this month. Things are going well and it’s a confidence booster. Much needed when making such a big career change.
Getting to know P’s family better. Sappy, but after spending Thanksgiving and a week after Christmas with them, I really feel comfortable there. His parents and brother are SO great and I love San Diego.
Being HOME. I love love Dallas and miss my friends there, but there is nothing quite like being home.
GOING TO MIAMIIIIII!!! GO IRISH! You should have seen my mom and I trying to pack for the trip. We were running around trying on every single green thing we own. I intend on wearing solid green most of the time… (For those confused, Notre Dame is playing Alabama in the National Championship Football game on Monday and my whole family + almost ALL of my college friends are going! I don’t think I get to go to the game, but fingers crossed for some reasonably priced tickets to pop up!)
I met with a doctor about the research project I’m helping her with this spring and am SO PUMPED! It is right up my alley and I totally geeked out asking her questions when we met. It sounds like I’ll have a lot of flexibility as well as a lot of autonomy while I work on it. Being so excited about it is confirmation that this career change is right for me!

I can’t say I’m exactly thrilled to be starting school again, but I am happy to be back into the swing of things. SO exciting that you’re going to Miami… Have fun!
I don’t mean to be a downer, but have you heard about the sexual assault allegations against several ND players? It’s pretty grim stuff and really disturbing when you learn one of the accused is still on the team. I just have a hard time rooting for them knowing how the school administration and the team covered everything up, which is really a shame since there are players on the team who work hard and are good people.
Anyway, just curious what your thoughts are on that matter. Enjoy the Miami sun and congratulations on your interviews.

This New Year’s Eve, I tried champagne for the first time in a while and I liked it! Before I’d always hated it, so this was a surprise for me. I think it’s because I like rosé wine better in general, so getting a rosé champagne made me like it a lot better.
