I’m sick of eggs. I’ve been eating scrambled eggs and spinach for breakfast every morning, and it just gets boring. Sometimes I add some sharp cheddar or other veggies, and usually I add some fruit or sausage, but still it feels like it’s missing something…
There is no better way to eat eggs for breakfast than on a big old bagel sandwich. But since I’m currently trying to be really good about a healing diet for my SIBO, those are out of the question. I hope grains can make their grand re-entry into my life really soon. I miss oatmeal badly and my Love Grown keeps staring at me from the pantry.
But for now, problem solved!
I now have a breakfast that’s easy for week days, isn’t plain old eggs, and makes me less jealous of my boyfriend getting a Bruegger’s bagel sandwich in the morning.
I made a bunch of these grain free coconut flour “flatbreads” from Thrive Style and have them in the fridge. Super easy. Like I said on Friday, I am going to eat these things forever.
I whisked an egg and tore up some spinach into a mini pyrex and microwaved it for 1 minute for a super quick, perfectly round egg. If you have more time, a fried egg or some fancier fixings would be nice. But for weekday mornings, microwave will do.
Then I sliced an avocado on top.
I’m so happy with myself. I’m so excited for breakfast this week.
