Gooood morning! Hope y’all had a great weekend! Mine was really relaxing – I loved getting to hang out with Crossfit friends, get in a good workout, take some walks, and get all my work done.
I even got to make a video with JD! We’re finally ready to start posting regularly on the Tiger’s Den Blog. So far I’ve done a post on what shoes to wear and we made a vlog on our new training program.
Okay. Let’s talk breakfast.
I’ve been wanting to find a Paleo breakfast that wasn’t eggs. I’m not currently doing strict Paleo, but breakfast is definitely the hardest meal for me to fit into that type of diet. I like sweet breakfasts, and ones I can eat at work, so I automatically go to oatmeal or yogurt.
Eggs and bacon or leftover dinner, which are what lots of Paleo people recommend, just aren’t my thing. The Oatless “Oatmeal” that Tina has posted about seemed like something I could handle. But I’d put off trying it until now.
I found a TON of different recipes for this. Some using 3 whole eggs an 3 types of nuts, some using only egg whites and no nuts. I ended up basing mine on this recipe but adjusting a bit. This is what I ended up using:
- 7 TBSP egg whites ( btw 2-3 egg whites)
- 1/4 cup vanilla (or regular) almond milk
- 1 TBSP ground flax
- splash vanilla
- hefty shake cinnamon
- 1/2 banana
It was REALLY simple. I just combined all the ingredients in a bowl and mixed it together, mashing the banana well.
Then pour it into a sauce pan set to medium high heat.
Stir frequently for about 3-5 minutes until the mixture starts to take on a creamy texture.
Then you’re done! Transfer the mixture to a bowl and top with whatever you’d like. I stuck to almond butter, but I can seen berries, banana slices, nuts, honey..endless!
The texture is sort of in between fluffy eggs and really creamy oatbran. It’s super light and mildly sweet. I liked it A LOT and think it will be a great option for breakfast. I’ve heard it’s great cold too so I can make it the night before and take it to work with me!
