So last week I told you I was going to show you more full days of meals, and I have done that a total of ZERO times since then. Blogger fail. But in my defense, I was out of town at HLS! And soon I’m going to be out of town again. I’ll try to start when I get back.
Breakfast, 8:45am: I’m still experimenting with more breakfast ideas (oatless oats was a success!) and this one was a total winner too. It’s not the easiest to make ahead and bring to work, but tupperware makes all things possible :
Apple Cinnamon Stuffed Omelet with Almond Butter
- 1 egg + 3 egg whites whisked with 1/2 teaspoon vanilla
- 1/2 apple diced, tossed with 1 teaspoon cinnamon and 1 tablespoon ground flax
- 1 tablespoon almond butter for drizzling
Pour the eggs into a pan over medium heat and let them sit. After a minute or so start lifting the edges and letting any uncooked egg get underneath. Once it’s completely set, remove it from the pan carefully to keep it round and intact. It should be sort of like a crepe.
Dice the apples and mixed them with the cinnamon and flax in a small bowl. Microwave for 30 seconds to a minute until they are soft and smell like apple pie.
Place the apples onto the omelet and fold it up, then drizzle with almond butter and devour!
Lunch, 12:30pm: I’m not doing much grocery shopping this week since I leave again on Friday, but I needed to run to Whole Foods for some plane snacks, apples, etc. I grabbed lunch while there: roasted veggies, marinated mushrooms, and some other salads topped with a piece of salmon. I also had a Kombucha that exploded all over me in the car.
Snack, 4:30pm: Surprisingly not too hungry – I think being stuck in an afternoon meeting distracted me. But I ate the other half of my apple from breakfast and some cashews as a pre-Crossfit snack.
Dinner, 8:00pm: I hadn’t seen Lauren in over three weeks, so we had to catch up! We met at our favorite, Dive, and I ordered 3 of their smaller salads: 2 portions of their amazing chicken salad and one of the kale salad. My stomach felt a little weird, but it was delicious.
Dessert, 8:45pm: Teeny chocolate craving, so I had a square of bittersweet baking chocolate. I got hooked on these when I lived at home and it was the only form of chocolate I could find. I love that they aren’t too sweet (zero sugar, actually) and that one square is the perfect size.
